  • This place actually doesn't have a English name. I translated it using google translate so don't look for an English sign. In Japanese it is "麺匠 たか松" It is near the west end of Nishiki market. We were near the area and found this place on google. According to the store's website their noodles are made of finely ground whole buckwheat. The soup stock is lighter and is made of pork, chicken, shrimp, scallops, and various seafood. It is one of those little shop that you have a vending machine by the door. Put cash in there and make your meal selection. Then a ticket will come out which you will then hand it to the server. Seat yourself anywhere and 5 minutes later your ramen will come, nice and hot and tasty. There's light daishi broth in the stainless thermos on the counter which you can add to your soup to adjust the level of saltiness. There was "black 7-spice" on the table if you need a little more kick, but there's no chili sauce. I did enjoyed the lighter and flavorful broth more than the thick porky broth at Ippudo's. The whole wheat noodle was smooth and chewy, not rough at all. There was only one slice of meat per bowl so I had to order a meat side dish. The meat side dish came with one slice of charsiu pork, several smaller slices of chicken breast meat, and one seasoned egg. charsiu was kind of tasteless but the chicken meat was quite tender. We went there for a quick dinner and it didn't seem like they turned into some izakaya filled with cigarette smoke like some other noodle shops in the evenings. No one pressured us to order more than we want. The place is filled with men dressed in suits after work. We enjoyed the food and the new experience of eating like locals.
