If you want to be assured of a splendid meal in Uwajima, Sarashina is the place to go. Using superb local produce, master chef Kimura-san offers a number of innovative delicacies that can only ever be enjoyed here. The signature dish is of course the world famous fugu - Chef Kimura is one of the leading fugu chefs in Japan (this requires special training and accreditation). Try the fugu sashimi, the fugu grilled, Mediterranean style with olive oil, and if you are visiting when the weather is chilly, the warm fugu sake is a treat you can only have here. A meal at Sarashina is an experience so special that many Japanese people travel to Uwajima for it, so you should not miss it.
